1 clove garlic, minced
1/2 onions, chopped
3 tablespoons olive oil
1 bundle spinach, cleaned
4 oz green peas, blanched
2 tablespoons kome miso (white)
3 cups whole milk
8 snap peas, blanched for garnish
8 fava beans, blanched for garnish
 
Makes 4 servings

 

1. Saute garlic and onions with olive oil until translucent.

2. Add spinach and saute until soft.

3. Add green peas and continue sauteing.

4. Transfer to a blender and blend with milk and miso until the soup is consistent.

5. Strain and place the soup in a pot to warm.

6. Place the soup in a serving bowl and garnish with beans and drizzle with olive oil.
