1. Combine beef, onions, egg, panko and mugi miso in a bowl and knead for 1 minute.
2. Shape meat patties to desired sizes.
3. Place the patties on an oiled pan heated on medium heat.
4. Grill 2-3 minutes on each side.
5. Combine ketchup, mame miso and shallots.
6. Warm the buns and place the patty, ketchup, scallions and top the bun to cover.
RECIPE TIPS: Addition of miso to meat patties not only minimizes the odor of ground beef, but also maximizes juiciness of the meat. Extra shortening is not necessary to add tenderness to this type of healthy Japanese-style hamburger.
