2 lb pork spare ribs
1 garlic clove, minced
4 tablespoons mame miso
1 onion, chopped
1 carrot, chopped
3 cups red wine
2 apples, cored and chopped
1/4 lb Brussels sprouts or broccoli
1 tablespoon brown sugar
 
Makes 4 servings

 

1. Combine garlic and miso in a small bowl.

2. Marinate spare ribs with miso-garlic paste and keep it overnight.

3. Combine spare ribs, onions, carrots and red wine in a large pot and simmer for 3 hours.

4. 15 minutes prior to serving add apple, cabbage, more miso and brown sugar.

RECIPE TIPS: This is a hearty dish great for cold winters. The combination of juicy ribs, flavorful stock and the umami from mame miso makes this stew pair great with a glass of full bodied red wine and oven-baked walnut bread.
